Interview with coffee farmer Aaron Fernandes

Coffee farming is an intricate process that involves passion, dedication, and hard work. Q: Hi Aaron, thanks for joining us today. Can you tell us a little bit about yourself and your coffee farm?

A: Of course, happy to be here. My name is Aaron Fernandes and I am a third-generation coffee farmer in the highlands of Chiapas, Mexico. Our family farm, Finca Santa Rosa, has been growing and producing specialty coffee for over 50 years.

Q: That’s impressive. Can you tell us about the process of growing coffee on your farm?

A: Certainly. We start by selecting only the best coffee varieties and planting them in rich, volcanic soil at high altitudes. We use organic farming methods, which means we do not use any synthetic fertilizers or pesticides. We also rely on natural shade and rainwater to nourish our coffee plants.

Q: That sounds like a very sustainable approach. Can you tell us about the harvest process?

A: Sure. Our coffee cherries are selectively hand-picked by skilled workers who only choose the ripest and highest quality beans. After harvesting, the coffee cherries are processed using the wet method, where the outer skin and pulp are removed before the beans are washed and dried in the sun. This process can take up to two weeks.

I take pride in knowing that my coffee beans are enjoyed by people all over the world. It’s a testament to the hard work and dedication that my family and I have put into growing and harvesting these beans.

A: Our coffee is known for its bright acidity, fruity notes, and caramel sweetness. We take great pride in producing a high-quality, specialty coffee that is enjoyed by coffee lovers around the world.
